Spray a muffin tin with non-stick spray. Whisk together however many eggs desired (<1 per muffin cup) adding splash of half-and-half or milk. Sprinkle with salt and pepper. Evenly distribute the egg mixture among muffin cups. Add about 2 tablespoons of mix-ins (cooked bacon, sausage, tomatoes, mushrooms, spinach, etc.) to each cup then sprinkle with cheese. Bake until puffy and edges are golden brown, about 20-25 minutes.
