Malted Blondies

Ingredients:
2 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
3 Tablespoons malted milk powder
14 Tablespoons unsalted butter, softened, cut into 1-inch cubes
1 3/4 cups firmly packed dark brown sugar
2 large eggs
2 teaspoons pure vanilla
1 cup malted milk balls (like whoppers) coarsely chopped in a food processor
1 cup semisweet, milk chocolate or white chocolate chips

Directions:
Preheat oven to 350 degrees F. Butter bottom and sides of a 9-by-13-inch baking pan. In a medium bowl, whisk flour, baking powder, salt, and malted milk powder together. In a bowl of an electric mixer fitted with a paddle attachment, beat the butter and brown sugar on medium speed until completely combined. Scrape down the bowl, add the eggs and vanilla, and beat until combined. Add the flour mixture in two batches and beat until just combined. Add the malted milk balls, semi sweet, milk chocolate or white chocolate chips and beat until just combined, about 10 seconds. The mixture will be thick.Turn the mixture out into the prepared pan and use an offset spatula to spread it evenly. Bake in the center of the oven for 20-25 minutes, or until a toothpick inserted into the center of the blondie comes out fairly clean. I like mine on the gooier side so I start checking them a bit earlier than 20 minutes and pull them out when there is a little bit of the batter still stuck to the toothpick.Once the blondies are done transfer to a wire wrack and let cool for 20 minutes. Cut them into squares and serve with ice cream.

Candy Corn Cookies

Ingredients:
1 cup sugar
1 cup softened butter
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Sugar

Directions:
Mix 1 cup sugar, butter, milk, vanilla and almond extract, and egg. Stir in flour, baking powder and salt. Color one part of dough with orange coloring; color another part of dough with yellow coloring. Form all three dough parts into rounds and cover and refrigerate for at least one hour.

Heat oven to 350 degrees. After refrigerating, roll each of the colored doughs into a 5 inch by 24 inch strip; you could vary this. Trim the edges.

Then, combine the three strips. Weigh each of the colored dough disks to make sure there is an even amount of each. Trim the edges. Roll the dough up evenly and carefully.

Once it is rolled up, you can begin to cut it into slices of about one-half inch. A bread knife worked really well. Before baking, sprinkle sugar on each cookie.

Before baking, sprinkle sugar on each cookie. Bake at 350 for about 8 to 10 minutes. Remove from cookie pans and place on cooling rack.

The only tricky part is making sure that you achieve the correct stiffness. If the dough is too soft, refrigerate longer. If the dough is too stiff, let sit out on the counter.

Giant Cookie

*Makes 1 giant cookie
Ingredients:
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter, melted and cooled
1 egg
1/2 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1 1/2 cup flour
1/2 cup chocolate chips

Directions:
Preheat oven to 350 degrees.
In a medium bowl, cream together the sugars and butter. Add the egg and vanilla and mix. Add the dry ingredients and mix well. Fold in the chocolate chips.
Line a large (11X17-inch) baking pan with foil and press the cookie into a circle. I press my cookie into a 9-inch circle, about 1/4 to 3/8-inch thick. When it bakes, it spreads to about 11 inches, which fits perfectly onto a 12-inch round cardboard circle you can find at most craft stores.
If desired, top the cookie with M&M’s or any other garnishes. Bake for 13-16 minutes until the cookie is lightly golden brown. Let the cookie cool completely on the baking pan – this helps the cookie stabilize and set so it can be easily lifted off the pan. Once cool, gently use the foil to lift the cookie off the pan.

Lemon Blueberry Buttermilk Cookies

Ingredients:
1 ½ cups unbleached all-purpose flour
Zest of two large lemons
¼ tsp. baking soda
¼ tsp. salt
6 Tbsp. (3 oz.) unsalted butter, at room temperature
¾ cup granulated sugar
1 large egg
½ tsp. vanilla extract
1/3 cup buttermilk
Fresh blueberries

Glaze:
Confectioners sugar
Fresh lemon juice
Lemon zest

Directions:
Line 2 large baking sheets with parchment paper or silicone liners. Preheat the oven to 350°F.
In a medium bowl, whisk together the flour, baking soda, and salt. In a small bowl, add the sugar and lemon zest. Rub them together with your fingers until well mixed. This brings out the lemon flavor.

In the bowl of a stand mixer, beat the butter until creamy. Add the sugar/lemon mixture and beat until pale and fluffy. Add the egg, and beat well to mix. Add the vanilla, and beat on low. Mix in the flour mixture and the buttermilk in batches at low speed, beginning and ending with the flour. Scrape down the sides of the bowl with a rubber spatula as needed.

Drop the dough by level tablespoons onto the prepared baking sheets, leave about 1 ½ inches between each cookie. Tuck 4-5 blueberries into each cookie. Try to make sure they are hidden. Bake one sheet at a time for about 11 minutes. Cool the cookies on the baking sheet for 1-2 minutes; then transfer them to a wire rack.

For the glaze, whisk together the sifted confectioners sugar, lemon juice, and lemon zest. I never measure, just guess until you get the right consistency and flavor. Drizzle the glaze over the cookies.

Chocolate Chip Cookie Pretzel Bars

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks unsalted butter, softened
1 cup light brown sugar
1/2 cup sugar
2 large eggs
2 teaspoons pure vanilla extract
One 12-ounce bag bittersweet chocolate chips
1 1/2 cups mini pretzels, coarsely chopped
2 tablespoons chocolate sprinkles (optional)

Directions:
Preheat the oven to 350°. Spray a 9-by-13-inch pan with cooking spray.
In a bowl, whisk the flour, baking soda and salt. Using a mixer, beat the butter with both sugars at medium speed until light and fluffy, about 1 minute. Beat in the eggs and vanilla extract. On low, beat in the dry ingredients, just until incorporated. Stir in the chocolate chips and pretzel pieces.
Spread the batter evenly in the pan. Press the batter down with a spatula. If you want to use the sprinkles, sprinkle them on top of the batter. Bake for 30 minutes, until golden brown. The middle might be a little gooey but that is ok, the bars will set up. Transfer the pan to a rack and let cool completely.
Use a knife to go around the side of the pan to loosen the bars and cut into squares.

8. Place the cookie dough balls on a large baking sheet with parchment paper or a Silpat. Make sure they are a couple inches apart.
9. I pressed down on the cookies slightly to help them flatten out. If you like puffy cookies, don’t press them down.
10. Bake for 8 minutes and NO longer. You want them to stay soft! Let the cookies sit on the baking sheet for a minute or two, then transfer to a cooling rack.

Chocolate Coconut Macaroons

Ingredients:
Made 18 cookies
2/3 cup sweetened condensed milk
1 large egg white
1½ teaspoons vanilla
1/8 teaspoon salt
3½ cups coconut-sweetened

For the chocolate dipping:About 10 ounces bittersweet chocolate, chopped (you can use semi-sweet or milk chocolate if you wish)

1. Preheat the oven to 325°F. Line two baking sheets with parchment paper or a Silpat mat.
2. In a large bowl, stir together the sweetened condensed milk, egg white, vanilla extract, and salt. Stir until combined. Add in the coconut and mix well.
3. With a spoon, scoop up about 2 Tablespoons of the dough and place the dough balls on the baking sheets-about 2 inches apart. Form the cookies into mounds that have a peak at the top. Use your hands-squeeze the dough together and create a point at the top. Your hands will get sticky-you may need to wash them in between forming cookies.
4. Bake cookies one sheet at a time for 15 to 2o minutes. The cookies will turn golden brown.
5. Cool the cookies on the baking sheets for about 5 minutes or until they are firm and set. Remove with a spatula onto a cooling rack.
6. Melt chocolate in a microwave safe bowl. Make sure you keep stirring the chocolate every 20 seconds or so until chocolate is melted and smooth. You can melt the chocolate in a bowl over a pan of boiling water if you wish. Josh did it in the microwave though.
7. Lay out a large piece of parchment paper. Dip the cookies into the chocolate-just so the bottoms are covered in chocolates. Set dipped cookies on the paper to dry. Dip all of the cookies. If you have extra chocolate drizzle the tops with chocolate for fun:)
8. Let the cookies sit until the chocolate has dried.

Turtle Thumbprints

Ingredients:
1 egg
1/2 cup butter, softened
2/3 cup sugar
2 tablespoons milk
1 teaspoon vanilla
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
16 chewy caramels, unwrapped (like Werther's)
3 tablespoons whipping cream
1 teaspoon pure vanilla extract
1-1/4 cups finely chopped pecans
1/2 cup (3 ounces) semisweet chocolate pieces
1 teaspoon shortening

Directions:
1. Separate egg; place yolk and white in separate bowls. Cover and chill egg white until needed. In a large mixing bowl beat butter with an electric mixer for 30 seconds. Add sugar and beat well. Beat in egg yolk, milk and vanilla. In another bowl stir together the flour, cocoa powder, and salt.
2. Add flour mixture to butter mixture and beat until well combined. Wrap the cookie dough in plastic wrap and chill for 2 hours or until easy to handle.
3. Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper or a silicone baking mat. In a small saucepan heat and stir caramels, vanilla and whipping cream over low heat until mixture is smooth. Set aside.
4. Slightly beat reserved egg white. Shape the dough into 1-inch balls. Roll the balls in egg white, then in pecans to coat. Place balls 1 inch apart on prepared cookie sheet. Using the back of a 1/2 teaspoon round measuring spoon, make an indentation in the center of each cookie.
5. Bake for 10 minutes or until edges are firm. If cookie centers puff during baking (which they most likely will), repress with your measuring spoon. Spoon melted caramel mixture into indentations of cookies using a teaspoon. Transfer cookies to wire racks; cool. (If necessary, reheat caramel mixture to keep it spoonable.)
6. In another saucepan heat and stir chocolate pieces and shortening over low heat until chocolate is melted and mixture is smooth. Let cool slightly. Drizzle chocolate mixture over tops of cookies using a fork and a quick back and forth motion as the chocolate drips.
Let stand until chocolate is set. Makes 36 cookies.

1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
1 large egg
Cooking spray

Filling:
30 hard peppermint candies, crushed (about 1 cup)*
3 cups vanilla low-fat ice cream, softened

To prepare cookies, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cocoa, baking soda, and salt, stirring with a whisk. Combine sugars and butter in a large bowl, and beat with a mixer at medium speed until well blended. Add vanilla and egg, and beat well. Add flour mixture to sugar mixture, and beat at low speed until well blended.
Lightly coat hands with cooking spray. Divide dough in half. Shape each half into a 6-inch log. Wrap logs individually in plastic wrap; freeze 1 hour or until firm.
Preheat oven to 350°.
Cut each dough log into 24 (1/4-inch) slices; place cookies 1 inch apart on baking sheets coated with cooking spray. Bake at 350° for 11 minutes or until set. Cool completely on wire racks.
To prepare filling, place candies in a shallow bowl. Spread 2 tablespoons ice cream onto flat side of each of 24 cookies. Top with remaining cookies, flat sides down, pressing gently. Lightly roll the sides of each sandwich in candy. Wrap each sandwich tightly in plastic wrap; freeze 4 hours or until firm.
*The peppermint candies should be coarsely crushed in a large zip-top plastic bag by lightly tapping them with a rolling pin or heavy skillet (a food processor would just pulverize them). You can substitute regular unsweetened cocoa powder in the cookies.

1 tsp vanilla

Then stir in the cranberries, white chocolate chips, and chopped pecans.
Drop by rounded teasponfuls onto the parchment paper lined cookie sheet and sprinkle the tops with a few leftover cranberries or white chocolate chips if you want.
Bake for exactly 10 minutes. Remove from the oven – cookies will be slightly golden brown around the edges and the middles will look underdone.
