Molasses Cake with Sugared Apples

Ingredients:
1 and 1/2 cups all purpose flour (I used half whole wheat)
1 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 cup brown sugar
4 tablespoons butter, softened
1/4 cup molasses
2 eggs
1/3 cup plain yogurt or buttermilk
1 teaspoon vanilla
2 or 3 large baking apples, thinly sliced
1 heaping tablespoon granulated sugar

Directions:
Preheat the oven to 350 degrees. Grease an 8 inch baking dish. In a small bowl, whisk together flour, powder, soda, salt, cinnamon, and ginger. In a separate bowl, beat butter, sugar, and molasses until creamy. Add the eggs and beat well. Gently beat in yogurt and vanilla. Gently add dry ingredients, mixing only until blended. Scrape batter into prepared baking dish. Cover the top with apples and sprinkle with sugar. Bake for 40 minutes.
