Apple Fitters

Ingredients:
2 cups all-purpose flour
2 tbsp. granulated sugar
1 tbsp. baking powder
Pinch salt
2 eggs
2/3 cup milk
2 tbsp. vegetable oil
1/2 tsp vanilla extract
2 cups diced apples (about 2 large apples, peeled and cored)
additional vegetable oil for frying
cinnamon sugar for topping

Directions:
In a medium bowl, stir together flour, sugar, baking powder and salt.In a large mixing bowl, whisk together eggs, milk and 2 tbsp of vegetable oil and vanilla extract. Add the flour mixture to the egg mixture and stir until combined. It will be a very thick batter. Add the diced apples, mixing until they are incorporated into the dough. Don't worry if it's sticky and hard to mix. It will be fine.Pour enough vegetable oil into a saucepan, wok or deep fryer to a depth of 1-1/2 to 2 inches. Place over medium heat and heat to 375 degrees F. Use a deep fry thermometer to make sure. When the oil is hot, drop the batter by tablespoonfuls into the hot oil, about 4 or 5 at a time. Fry, turning the fritters over with a wooden spoon so that they brown evenly, for 2 to 3 minutes or until dark golden brown and crisp. Remove from the oil and let drain on paper towel before sprinkling with cinnamon sugar. Repeat with the remaining batter. Serve warm.
