Fruit Pizza

Ingredients:
1/2 cup unsalted butter, room temperature
2/3 cup sugar
1 egg
Zest of one lemon
1 tsp vanilla extract
1 1/4 cup flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt

Frosting:
1 package of cream cheese, (8 oz.)
2 Tbsp granulated sugar
1/2 cup powdered sugar
1 Tbsp fresh lemon juice
1/2 tsp vanilla
Optional: 1/2 tsp coconut extract
Optional: Zest of 1 lemon

Fresh fruit:
Strawberries
Blueberries
Raspberries
Kiwi
Peaches
Blackberries
Pineapple
Banana
Mango
Canned mandarin oranges

Directions:
Cream the butter and sugar together in a mixer. Add the egg, lemon zest, and vanilla. Mix until well combined. Sift flour, baking soda, cream of tartar, and salt. Add flour mixture to the butter mixture on low speed, using the mixer. Mix just until combined. Roll into a ball and wrap in plastic wrap, then refrigerate for at least an hour to chill the dough. Preheat the oven to 350 degrees. Roll out dough on a lightly floured surface then press into a lightly greased pizza pan. Bake for 10-12 minutes. You want the crust to be just a light golden brown. Let the crust cool.

Fruit Salsa & Cinnamon Chips

Ingredients:
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)
10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray
2 cups cinnamon sugar

Directions:
1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees.
3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.
