Apple Fitters

Ingredients:
2 cups all-purpose flour
2 tbsp. granulated sugar
1 tbsp. baking powder
Pinch salt
2 eggs
2/3 cup milk
2 tbsp. vegetable oil
1/2 tsp vanilla extract
2 cups diced apples (about 2 large apples, peeled and cored)
additional vegetable oil for frying
cinnamon sugar for topping

Directions:
In a medium bowl, stir together flour, sugar, baking powder and salt.In a large mixing bowl, whisk together eggs, milk and 2 tbsp of vegetable oil and vanilla extract. Add the flour mixture to the egg mixture and stir until combined. It will be a very thick batter. Add the diced apples, mixing until they are incorporated into the dough. Don't worry if it's sticky and hard to mix. It will be fine.Pour enough vegetable oil into a saucepan, wok or deep fryer to a depth of 1-1/2 to 2 inches. Place over medium heat and heat to 375 degrees F. Use a deep fry thermometer to make sure. When the oil is hot, drop the batter by tablespoonfuls into the hot oil, about 4 or 5 at a time. Fry, turning the fritters over with a wooden spoon so that they brown evenly, for 2 to 3 minutes or until dark golden brown and crisp. Remove from the oil and let drain on paper towel before sprinkling with cinnamon sugar. Repeat with the remaining batter. Serve warm.

Mostly Wheat Pizza Dough

Ingredients:
1 teaspoon white sugar
1 1/2 cups warm water (110 degrees)
1 tablespoon active dry yeast
1 teaspoon olive oil
1 teaspoon salt
2 cups whole wheat flour
1 1/2 cups all purpose flour

Directions:
1. In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
2. Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
3. When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
4. Preheat the oven to 500 degrees F. Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan.
5. Bake pizza crust for 5-8 minutes depending on thickness of the crust.
6. Top pizza with sauce, cheese, meats, or vegetables. Turn oven down to 425 and bake for 10 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top. (I like to broil it at the very end to crisp up the pepperonis)

Add the dry ingredients and mix on low speed, stopping once to scrape down the sides. Mix until just incorporated, 2 to 3 minutes. The dough will be sticky.Gather the dough into a disk, wrap in plastic wrap and chill for at least 2 hours or overnight.

Position the racks in the lower and upper thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with Silpats or parchment paper. Pour the confectioners' sugar onto a plate or into a shallow bowl. Roll the dough into 1-inch balls, drop onto the sugar and roll each ball so that all sides are covered. Sweet Potato Fries

Oreo Truffles

1 package oreo cookies, 16 ounces (divided… use cookie including the cream center)
1 8oz. package cream cheese (softened)
White chocolate-the kind made for dipping

Directions:
1. Crush cookies in a food processor and stir in softened cream cheese. Use the back of a large spoon to help mash the two together.
2. Roll the mixture into 1" balls and place on wax paper covered cookie sheet.
3. Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry. I melted dark chocolate and drizzled it on the white.
4. Once dry, refrigerate. Makes about 36 truffles.

FYI: It helps to freeze the uncoated balls for a few minutes to keep the mixture from starting to fall apart in the melted chocolate. If this becomes a problem, dip them in the chocolate, let dry and then dip again. They are also good dipped in regular milk or dark chocolate. Try different types of Oreos for fun, such as mint, peanut butter, holiday, etc.

1/2 tsp salt
1 cup butter, room temperature
1 1/2 cups (light) brown sugar
1/2 cup sugar

1 cup butterscotch chips or toffee bits (I chop up 3 Heath candy bars)

Preheat oven to 325F. Grease a 9x13-inch baking pan.In a medium bowl, whisk together the flour, baking powder, baking soda and salt. In a large bowl (or the bowl of a stand mixer), cream together the butter and sugars until light and fluffy, about 3 minutes. Beat in the eggs one at a time, waiting until each is fully incorporated to add the next, then beat in the vanilla. With the mixer on low, gradually add in the flour mixture, stirring only until no streaks of flour remain. Stir in the chips, nuts and coconut by hand. Spread batter into prepared pan, using a lightly greased spatula to even it out. Bake for 35-40 minutes, or until a tester comes out with only a few crumbs. Cool blondies in the pan, but turn them out (and then reinvert them so the top is facing up) before slicing into 32 bars.

Eggplant Parmesan

Ingredients:
2 eggplants (about 2 pounds total)
3 egg whites
3 tablespoons water
1 cup fine dry breadcrumbs ( I used homemade whole wheat crumbs)
½ cup freshly grated Parmesan cheese, divided
½ teaspoon salt
½ teaspoon freshly ground pepper
2 ½ cups marinara sauce ( I used my homemade sauce)
¾ cup grated part-skim mozzarella cheese

Directions:
1. Preheat oven to 400°F. Coat two baking sheets and an 8-by-11 1/2-inch baking dish with nonstick cooking spray.

2. Cut eggplants crosswise into 1/4-inch-thick slices. Whisk egg whites and water in a shallow dish until frothy. Combine breadcrumbs, 1/4 cup of the Parmesan, salt and pepper in another shallow dish. Dip the eggplant slices into the egg-white mixture, then coat with the breadcrumb mixture. (Discard any leftover breadcrumbs and egg white.) Arrange the eggplant slices in a single layer on the prepared baking sheets. Bake for 15 minutes, turn the eggplant slices over, and bake until crisp and golden, about 15 minutes longer.

3. Make a homemade sauce or use store bought. For my sauce, I saute onion, garlic, red pepper, fennel seeds in olive oil. I then add 2 cans of diced tomatoes and a tablespoon of tomato paste. Next, I add in fresh basil and Italian seasoning, salt and pepper. Let simmer for a bit. Pour some a little of the sauce into the baking dish. Arrange half of the eggplant slices over the sauce, overlapping slightly. Spoon 1 cup of the remaining sauce over the eggplant and sprinkle with half of the mozzarella cheese and a sprinkle of the parmesan. Add a layer of the remaining eggplant slices and top with the remaining sauce, mozzarella and Parmesan.

Bake, uncovered, until the sauce bubbles and the top is golden, 15 to 20 minutes.

Twice Baked Potatoes

Ingredients:
8 good sized potatoes
1/4 c. sour cream
milk or cream, or both
bacon, cooked and crumbled
Chives or Scallions
2/3 c. cheese, grated, plus more for the tops (recommend cheddar/mozzarella mix)

Directions:
Bake the potatoes in the oven until tender, wrapping some in foil. Get a baking sheet out.Throw the baked potatoes that were wrapped in foil into your kitchen aid or other mixing bowl. Once the rest of the potatoes are cooled enough to touch, cut them in half, lengthwise. Carefully scoop out the inside of the potato, adding it to the others, and you should be left with a nice, clean empty skin to fill with the potato mixture later.

Once each potato has been cleaned out, start mixing to break up the potatoes, add in the cream / milk and sour cream. Give it another quick stir. Add in the bacon pieces, chives, cheese, some salt and pepper to taste. Mix it through, adding in more sour cream or milk until you reach a nice thick consistency. It needs to be smooth and mixed through, but at the same time thick enough that it can hold it's self up in the potato shell.

Fill each shell with the mixture and top with more cheese. Bake at 375 degrees 10-15 minutes, or until the cheese is melted and bubbly and browned on top.

Chippers

Ingredients:
1 c. melted chocolate (I used 'dark' compound chocolate, Melts brand)
1/ 2 c. scant butter-flavored crisco
2/3 c. brown sugar
1 egg
1 t. vanilla
3/4 t. baking soda
3/4 t. salt1 2/3 c. flour
1/2 c. white chips or chunks
1 c + choc chips

Directions:
Melt the chocolate in a small bowl by placing it atop a saucepan full of water over the stove over medium-high heat. Cool it to the point it won't scramble the eggs. Since I am impatient, the minute I see it 1/2 way melted I turn the stove off and stir it. As it continues to melt, I remove it from the heat altogether. This helps it so it never gets too hot that I have to wait.

Meanwhile cream the Crisco and the sugar. Add the egg and vanilla, and mix. Drizzle in the melted chocolate and give it another mix.Add in the dry ingredients and mix through. Add in the choc chips and the white chips and stir to combine. If the dough is seems to wet, add in some more flour. Sometimes it can be a little crumbly, and if it is, simply add in a few capfuls of milk.

Refrigerate the dough for an hour or two or throw them in the freezer for 20 minutes. I am not sure why this helps but I now do this with all of my cookie doughs. They seem to turn out more chewy and delicious. After the dough has been refrigerated, roll into any sized ball and you will need to mash them down so that they don't cook up in a ball. They need a little help. Bake at 375 degrees until they look done, approximately 8-15 minutes depending on how big you made them.

Directions:
In a saucepan combine the butter, margarine, salt, sugar, and water. Stir over medium high heat, until candy reaches 310 degrees {I don't have a candy thermometer. It is done to me after it just starts to turn a caramel color -she says to go until it is the color of a paper bag, but that tasted burnt to me when I cooked it to that stage}

Remove from heat and stir in the vanilla. Pour onto a buttered cookie sheet that has whole pecans dotted all over it. Pour the candy onto the pecans and spread smooth. After 3-5 minutes, top with chocolate and spread it after it is fully melted. Immediately top with chopped, toasted, almonds. Cool completely, then flip the candy and top with melted chocolate and more nuts. Cool completely again and then break into pieces.

Easy Scones

Ingredients:
Bread Dough - I like to use Rhodes Rolls. I zap them in the microwave for a quick thaw.
Oil - I use canola oil
Toppings - honey butter, cinnamon, sugar, jam, syrup, etc.

Directions:
Pour 1 inch of oil into a frying pan set to medium heat. (A tip for knowing when your oil is ready: tear off a tiny piece of bread and when it floats to the top and has bubbly sides it’s ready. You don’t want it sinking to the bottom.) Now stretch out your dough as far as it will go. Now cook about 1-2 minutes per side, watch these, they can burn fast. Then using tongs, place them on plate with paper towels to soak up any excess oil.

Symphony Brownies

1 box of brownie mix for 9 x 13 pan
3 Symphony candy bars with almonds and toffee chips

Mix the brownies according to box directions (I use the cakelike brownie instructions). Line a 9 x 13 pan with tinfoil and spray with cooking spray (makes for easy clean-up).

Pour 1/2 the brownie mix into the pan. It is not much. Place the 3 candy bars side by side on top of the mix. Don’t break or chop up the candy bars - they will be whole. Pour the remainder of the brownie mix over the top.

Bake according to directions. Let cool and lift the tinfoil out of the pan. Cut and serve.

Cook for 5-10 minutes on each side depending on the thickness.

Bunny S'More Jars

Ingredients & Directions:
1. Reduce 1 sleeve graham crackers to crumbs.
2. Layer 2/3 of the crumbs in a 1 quart jar.
3. Place 8 marshmallow bunny peeps standing up, facing out around the inside of the jar.
4. Press them up against the glass, but don't squash them.
5. Carefully spoon remaining crumbs in the center of the jar to support the bunnies, pressing down to keep it snug.
6. On top of this pour 1-1/4 cup Easter M&M's.
7. Spoon 1/3 cup brown sugar into center of M&M's, gently pressing with a spoon.

My changes: I did M&M's first, then Peeps, then put combined brown sugar and graham cracker crumbs in baggie. I didn't like how the crumbs made a mess in the jar.

Attach a gift tag giving the following instructions:
1. Empty the jar contents into a bowl. Snip the bunnies into bits with kitchen sheers or cut up with a knife. Return the bunny bits to the mixture. Mix well.2. Melt 1/2 cup butter; add 1 teaspoon vanilla. Pour this over the dry ingredients, mixing well. Pat into a greased 9" square pan. Bake at 350 degrees F for 15 minutes. Cool and cut into bars.(Makes 9 to 12 bars.)*Option - leave bunnies whole; combine remaining ingredients and place the bunnies on top; then bake as directed.
*This gift jar may be created to suit any holiday for which marshmallow candies are available.

4 8-oz pkgs cream cheese
2 cups dried cranberries
2 cups shredded cheddar cheese
1 jar Kraft Pineapple Cheese sauce

Mix together and form into a ball. Cover and refrigerate.

Pretzel Chicken Tenders

Ingredients:
3 pounds chicken tenders or boneless skinless breast cut into 1 1/2-inch strips
2 cups buttermilk
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons granulated garlic
3/4 teaspoon salt
2 teaspoons pepper
3/4 teaspoon red pepper flakes
1 1/2 cup smoked almonds
12 large sourdough hard pretzels
Canola oil, for frying

Directions:
In a small bowl, combine basil, oregano, granulated garlic, salt, pepper and red pepper flakes. Place buttermilk and half the spice mix into a double-lined resealable plastic bag. Add chicken and massage bag until well coated. Refrigerate 6 to 12 hours. Reserve remaining spice mix.
Place almonds in plastic bag. Break up with rolling pin or mallet (flat side) until mixture looks part rough chopped part crumbs. Remove almonds and place into shallow bowl. Put pretzels in same bag and mash with mallet or rolling pin until it looks like a mixture of large breadcrumbs and powder. Add to almonds mix to combine.
In a large fry pan, pour canola oil until it measures about 1 1/2 -inches high in pan. Heat over high, until oil is hot, but not smoking, temperature, 350 degrees.

Remove tenders from buttermilk and dredge in almond-pretzel mixture, pressing mixture into the tenders. Gently add tenders, in batches, to the oil. Be sure not to over crowd the pan. Fry tenders until they are dark golden brown, being careful not to burn, about 5 minutes or until cooked through. Remove and drain on a cookie sheet lined with a wire rack. Serve immediately with Spicy Honey Dijon Sauce or keep warm in a 200 degree F oven.

Spicy Honey Dijon Sauce
1/2 cup Dijon mustard
1/4 cup honey
1 chipotle peppers in adobo sauce
2 teaspoons adobo sauce (optional)
1 teaspoon cider vinegar

In a small food processor, combine all ingredients. Refrigerate until ready to use.

Sinful Apple Dip

Ingredients:
1 10 oz. tub of soft cream cheese or 1 8 oz. block softened
1/2 C brown sugar
1/4 C white sugar
1 tsp vanilla
2/3 pkg of a 8 oz. bag of SKOR English Toffee Bits
6-9 Granny Smith Apples cut into wedges for dipping
Directions:
Mix together with a spoon until smooth - cream cheese, sugars and vanilla. Fold in toffee bits just before serving so they don’t get soggy. I cut the apples just before serving to prevent them turning brown. Also throwing them in the freezer right away after being cut helps to keep them from turning brown.

Baby German Pancakes

Ingredients:
1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt

Directions:
Preheat oven at 400*

Blend all the ingredients in the blender. Grease your muffin tins or baking pan then fill 2/3 full with batter. Makes 24 muffins or fills a 9×13 baking pan if you just want one large pan.

Bake them for 15 minutes, or until puffy and golden on top. Use a knife to pry them out, hopefully they were greased well enough and should pop right out.

Top with powdered sugar, syrup, lemon juice, jam or fresh fruit.

Mini Heart Chocolate Cheesecakes

Ingredients:

Heart cheesecake pan (with removable bottoms)

Crust
½ Cup chocolate graham cracker crumbs
(1 pack of the 3 pack box yields 1 cup)
2 Tbs butter, melted
1 ½ Tbs sugar
1 pinch of salt

Filling
¾ Cup semi-sweet chocolate chips
8 oz. Cream cheese (softened)
½ Cup sugar
2 eggs
½ Cup sour cream
½ tsp. Vanilla extract

Have all ingredients at room temperature. Preheat oven to 325 degrees. Lightly spray pan, especially the sides. You probably could make these in a mini-muffin pan—-but this pan has removable heart disc bottoms that make it a breeze to remove the cheesecakes.
To make the crusts, combine cookie crumbs, butter, sugar and salt and mix until well blended. Divide the mixture between the hearts. Press evenly into the bottom of each well. It is about a tablespoon of mixture in each well. Bake crusts for 10 minutes. Cool completely on a wire rack.
Reduce oven temperature to 275 degrees.

Melt chocolate (I use the microwave). I process in my food processor or with a mixer the cream cheese and sugar until smooth—-stop occasionally to scrape down the sides of the bowl. Add the sour cream and vanilla and blend. Add the eggs one at a time blending after each egg. Add the melted chocolate and beat until completely blended—again stopping to scrape down the sides. Pour batter into the crusts. I fill completely to the top.

Bake until the filling is set, 18-20 minutes. I place a pan of water in the oven while baking. I allow the cheesecakes to set in the turned off oven with the door open a bit for about 30 minutes after baking is complete. I then allow them to cool on the counter for another 30 or so minutes. I think the slower cooling helps prevent cracks. Cover and refrigerate for at least 3 hours before unmolding. These freeze beautifully!

I decorate the tops with a little chocolate ganache. Heat 1/3 cup heavy cream (don’t substitute any thing less!), 1 T butter, and 1 T sugar. Bring to a boil, stirring constantly. Pour boiling cream mixture over 3 ounces (about 1/4 cup) semi-sweet chocolate chips. Allow to stand for 3-4 minutes. Stir until smooth. Pour onto tops of cheesecakes and smooth evenly.

Hot Queso Dip

Gorgonzola Filled Meatballs with Bay & Onion Creamy Tomato Gravy

1 1/2 pounds ground veal
1 pound ground beef
Salt and pepper
2 cloves garlic, grated or minced
1 large egg, plus 1 egg yolk
2 handfuls grated Parmigiano-Reggiano
2 handfuls plain bread crumbs
3 tablespoons sliced or finely chopped sage leaves
3 tablespoons extra-virgin olive oil
8 ounces Gorgonzola
1 tablespoon butter
2 fresh bay leaves
1 onion, finely chopped
1 cup chicken stock
1 (15-ounce) can crushed tomatoes
1/2 cup cream

Directions
Preheat oven to 400 degrees F.
Place meat in a mixing bowl and season with salt, pepper, add in garlic, eggs, cheese, bread crumbs and sage. Mix meat, roll into 8 large balls and arrange in a baking dish. Coat balls with 2 tablespoons extra-virgin olive oil. Using the end of a wooden spoon, make an indentation half way into each ball and fill the cavity with some Gorgonzola. Bake until golden and cooked through, 15 to 20 minutes.

Heat 1 tablespoon extra-virgin olive oil and butter in a sauce pot over medium heat, add bay and onions and season with salt and pepper. Add chicken stock and tomatoes and heat through, stir in cream, reduce heat to medium-low and simmer to thicken slightly 8 to 10 minutes.
Ladle sauce into shallow bowls and top with big stuffed meatballs and potatoes alongside, if desired.

S'more Brownies

Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt

Brownie:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour

Topping:
4 cups large marshmallows

Directions:
Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.

For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Mix together 2 eggs, 1 1/2 cup sugar and 1/2 cup oil
Add 2 cups flour, 2 tsp. baking soda, 1 tsp. salt, 1/2 tsp. nutmeg and 2 tsp. cinnamon.
Bake in greased 9 x 13 pan at 350 for 40 minutes.

Caramel Sauce
1/2 cup butter
1/2 cup evaporated milk or cream
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp. vanilla.
Cook in saucepan over medium heat until melted and thickened.

Roasted Red and Yellow Pepper Soup

Ingredients:
3 whole bell peppers
1 tablespoon each butter and olive oil
1 large onion, chopped
3 cloves garlic, chopped
1 large carrot, chopped
1 (14.5 ounce) can Italian style diced tomatoes, undrained
1 teaspoon honey
3 cups chicken or vegetable stock
1/4 to 1/3 cup heavy cream or half and half
fresh basil, if desired

Directions:
Roast bell peppers until blackened in most places. (I usually do it over a gas flame, but you can also do it in the oven at 450 degrees.) Place peppers in a ziptop bag for ten minutes. Remove from bag, remove stem and seeds and peel peppers, scraping with a knife. Chop coarsely. Heat olive oil and butter in a large pot over medium high heat. Add peppers, onion, garlic, and carrot. Saute until vegetables are softened, about five minutes. Add tomatoes with juices, honey and stock and bring to a boil. Reduce heat and simmer for 15 minutes, or until all vegetables are softened. Blend soup in blender, food processor, or with immersion blender, until not almost smooth, but with some chunky texture. Add cream and heat until just below a simmer. Season to taste with salt and pepper. Serve with fresh basil, sour cream and croutons if desired.
