Apple Nut Pancakes

Ingredients:
1 cup all purpose flour
2 tsp. salt
2 tbsp. baking powder
1 1/2 tbsp. sugar
2 apples, peeled, cored and chopped
1 cup milk
2 egg whites
2 tbsp. applesauce
1 tbsp. vanilla extract
1 tsp. cinnamon instead
1 cup walnuts, chopped (I like pecans)
maple syrup

Directions:
Preheat griddle over medium heat and coat with cooking spray.
In a medium bowl, combine flour, salt, baking powder, sugar, apples and walnuts.
In a separate larger bowl, combine milk, egg whites, applesauce, vanilla extract and cinnamon. Pour dry ingredients into wet ingredients and stir to combine. Pour 1/4 cup batter at a time onto griddle; cook for 3 minutes. Once the sides and top of pancake begin to bubble, flip and cook another 3 minutes.
